Sin embargo, la seguridad microbiológica de estos alimentos requiere de especial atención, dado que a lo largo de su proceso no se someten a tratamientos que aseguren la letalidad de los microorganismos. Aparece así la necesidad de dotar a la industria alimentaria en general, y a la de IV gama en particular, de pruebas rápidas para la detección de contaminantes. En este trabajo se presentan los fundamentos de los biosensores y la imagen hiperespectral (IH) y sus aplicaciones en la aportación de información que se pueda correlacionar con la calidad y el estado de frescura de los productos IV gama y de otros alimentos.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Summary: Minimally processed products are very attractive foods for consumers because of their nutritional properties and easy preparation. However, the microbiological safety of these foods requires special attention, since throughout their process they do not undergo treatments that ensure the lethality of microorganisms. This shows the need to equip the food industry in general and the ready-to-eat in particular with rapid tests for the detection of contaminants. This paper presents the fundamentals of biosensors and the hyperspectral image (IH) and its applications in the contribution of information that could be correlated with the quality and freshness of ready-to-eat products and other foods.]]></p></abstract>
