Las frutas y las hortalizas ocupan el segundo lugar con relación a pérdidas y desperdicios de alimentos, que ocurren principalmente en la etapa de postcosecha. En este contexto, el presente artículo busca discutir los determinantes del desperdicio de frutas y hortalizas en las últimas etapas de la cadena agroalimentaria, tanto a nivel de comercialización minorista como de consumo en los hogares, y presentar estrategias e intervenciones que han demostrado ser efectivas para disminuirlo. Si bien los determinantes de la pérdida y el desperdicio de frutas y hortalizas son diversos, los estrictos requisitos de calidad por comerciantes y consumidores tienen un rol fundamental en las últimas etapas de la cadena agroalimentaria. A nivel internacional se han implementado diversas estrategias para disminuir dichas pérdidas y desperdicios, aunque la evidencia sobre su eficacia es aún limitada. Entre las estrategias con mayor potencial se encuentran mejoras en la logística y la infraestructura, campañas de comunicación, reducción de precio, así como estrategias de redistribución y reutilización. En particular, la implementación de campañas de comunicación con mensajes que afectan positivamente la percepción de calidad asociada a frutas y hortalizas con imperfecciones estéticas o mensajes relativos a la sustentabilidad ambiental han demostrado tener un impacto positivo en el comportamiento del consumidor. En lo que respecta a la reducción de precio, si bien puede favorecer la compra, puede también señalar simultáneamente una calidad inferior. Esto sugiere la necesidad de combinar la reducción de precio con estrategias de comunicación para lograr el impacto buscado. A su vez, las estrategias que hacen foco en la redistribución y la reutilización de frutas y hortalizas han dado lugar a la aparición de emprendimientos sociales variados que han logrado un impacto positivo, tanto en términos de reducción de pérdidas como de contribución a la seguridad alimentaria. A partir de la evidencia disponible, en el presente trabajo se presentan recomendaciones para la aplicación de las estrategias antes mencionadas en el contexto local.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract: The environmental, economic and social consequences associated to food waste have raised great concern worldwide. Existing studies place fruits and vegetables as the second most wasted food group, having its highest share at postharvest stages. In this context, the present work discusses the determinants of fruit and vegetable waste in the final stages of the food supply chain, retail and consumption, and strategies and interventions that have been effective to reduce this waste. Even though determinants of fruit and vegetable losses and waste are diverse, existing strict quality standards play a key role in the final stages of the food supply chain. Several strategies have been implemented internationally in an effort to reduce losses and waste of fruits and vegetables. However, limited evidence as to which interventions are effective is available. Improving logistics and infrastructure, communication campaigns, price reduction, redistribution and recovery are among the strategies that have achieved food waste reduction to some extent. Particularly, communication campaigns including messages that positively affect consumer perception of quality of suboptimal fruits and vegetables or messages addressing sustainability have shown a positive impact on consumers&#8217; behavior. Lowering the price of suboptimal food items has encouraged purchase but has also raised concerns on quality. Therefore, combining price reduction with communication strategies could help achieve the desired impact effectively. In addition, a variety of initiatives that aim at fruit and vegetables redistribution and recovery have given rise to social projects that have shown a positive impact reducing food waste while tackling food insecurity. From the evidence gathered, the present work discusses recommendations for the implementation of the abovementioned strategies within the local context.]]></p></abstract>
<abstract abstract-type="short" xml:lang="pt"><p><![CDATA[Resumo: As consequências ambientais, econômicas e sociais da perda e do desperdício de alimentos geram grande preocupação em todo o mundo. As frutas e hortaliças ocupam o segundo lugar em relação às perdas e desperdícios de alimentos, que ocorrem principalmente na fase pós-colheita. Neste contexto, o presente artigo procura discutir os determinantes das pérdas e desperdícios de frutas e hortaliças nas últimas etapas da cadeia agroalimentar, tanto ao nível da comercialização a retalho como do consumo doméstico, e apresentar estratégias e intervenções que revelaram-se eficazes em reduzi-los. Embora os determinantes da perda e do desperdício de frutas e vegetais sejam diversos, os rígidos requisitos de qualidade por parte dos comerciantes e consumidores desempenham um papel fundamental nas últimas etapas da cadeia agroalimentar. Ao nível internacional, várias estratégias foram implementadas para reduzir as perdas e o desperdício de frutas e hortaliças, embora as evidências sobre sua eficácia ainda sejam limitadas. Entre as estratégias com maior potencial estão melhorias em logística e infraestrutura, campanhas de comunicação, redução de preços, além de estratégias de redistribuição e reaproveitamento. Em particular, a implementação de campanhas de comunicação incluindo mensagens que afetam positivamente a percepção de qualidade associada a frutas e hortaliças com imperfeições estéticas, ou mensagens relacionadas com a sustentabilidade ambiental, têm mostrado ter um impacto positivo no comportamento do consumidor. Quanto à redução do preço, embora possa favorecer a compra, pode também indicar simultaneamente uma qualidade inferior. Isso sugere a necessidade de combinar redução de preços com estratégias de comunicação para atingir o impacto desejado. Por sua vez, as estratégias que privilegiam a redistribuição e reaproveitamento de frutas e hortaliças têm levado ao surgimento de diversos empreendimentos sociais que têm alcançado um impacto positivo, tanto em termos de redução de perdas como de contribuição para a segurança alimentar. Com base nas evidências disponíveis, este trabalho apresenta recomendações para a aplicação das estratégias acima mencionadas no contexto local.]]></p></abstract>
